Here is an easy brocolli cheese soup recipe that can be ready in minutes. It is low carb and gluten free.
- 4 cups Broccoli (cut into florets)
- 3 cups Cheddar cheese (pre-shredded )
- 4 cloves Garlic (minced)
- 1 cup Heavy cream
- 3 1/2 cups Chicken broth (or vegetable broth)
Using medium heat, saute garlic for a minute in a large pot.
Then add the heavy cream, chopped broccoli and broth. Increase the heat and bring to boil. Reduce heat and simmer mix for 15-20 minutes. See to it that broccoli is tender.
Next is mix the shredded cheddar cheese while stirring. Continue to stir until the cheese is melted.
Serve immediately. Top with croutons if you want.
