This easy chicken soup recipe is as flavorful and satisfying. It will bring memories of childhood when chicken soup was always a remedy for a cold or fever.

- Chicken Breasts (with bones)
- 4 cups Chicken Broth
- 2 Celery Stalks (sliced into 1/4 thick)
- 2 Carrots (medium sized, sliced into 1/4 thick)
- 1 Bay Leaf
- 1 White Onion (chopped, medium sized)
- 1 Parsley (chopped)
- 1/2 cup White Rice
- 4 cups Water
In a large pot, bring to boil over medium heat the chicken, chicken broth and 4 cups of water for about 20 minutes. Using a ladle, skim the broth foam or fat.
Remove the bones and meat from the mix. Add the celery, onion, carrots and bay leaf to the broth, Simmer over low heat until the vegetables are half-cooked. This would take about 10 minutes.
Stir in the rice until they are al dente for 10 minutes.
The chicken meat would have cooled by now. Pick off the meat and make bite-size pieces. Place the meat into the mix once the rice is cooked.
Add parsley and salt to taste. Simmer for another 1 minute.
Serve hot in bowls.
