Easy Enchilada Casserole Recipe

When you think of Mexican food, enchiladas come to mind. Here is an easy enchilada casserole recipe for those who want a variation from the dry one. This would be perfect for the family dinners.


  • 1 pound lean ground beef
  • 1 cup salsa
  • 1 can (10 ounces) enchilada sauce
  • 2 cups fresh or frozen corn
  • 6 flour tortillas (10 inch)
  • 4 cups (16 ounces) shredded cheddar cheese


Step 1

First pre-heat the oven to 350 degrees. Using a large skillet, cook the ground beef on medium heat. When fully cooked, drain. Add the enchilada sauce and salsa. Set this aside.

Step 2

Next is to place 2 tortillas one on top of the other in the bottom of a 13 x 9 greased baking dish. Place a third of the meat mixture with 1 cup corn and about 1 1/3 cheese. Repeat the layering until all tortillas are in place.

Step 3

Place in open and bake uncovered under the sauce is bubbly. Let cool a bit before serving.
