In a large bowl, mix together 1 cup of dry mix, 1 cup milk, 1 egg and the vanilla. Whisk well for a minute or so until batter is nice and smooth.
Melt a pat of butter in a skillet over medium heat.
Pour in about 1/4 of a cup of the batter for a good standard sized pancake. Let cook until bubbles form on top of pancake then flip over with a large spatula. Cook on other side for about a minute or until golden brown.
