This easy muffin recipe is the simplest one that you can make. Add fruit or chocolate chips as desired to give the muffin a whole new flavor.
Perfect to go with coffee or tea or even a snack treat for the little ones.
- 125ml Vegetable Oil
- 250ml Semi Skimmed Milk
- 2 Eggs (medium)
- 200g Sugar
- 400g Flour
- 3 tsp Baking Powder
- 100g Chocolate Chips or Dried Fruit
Heat the oven to 200 degrees Celsius if you are using a fan oven or to 180 degrees Celsius if you are using gas.
Use 2 trays with paper muffin cases.
Put the eggs into a large mixing bowl and beat the eggs lightly for a minute.
Add the oil then the milk. Add sugar and whisk the mixture until you have a smooth batter.
Put the flour, baking powder and salt into the mixture. Mix thoroughly until smooth. Be careful not to over-mix else the result will be tough muffins.
Add the chocolate chips or dried fruit.
Transfer the batter into the muffin trays. Fill up 2/3 for each muffin tray and bake this for 20-25 minutes. The muffins are cooked when it has risen or when an inserted skewer in the middle comes out clean.
