This recipe uses some very basic ingredients and is very easy to make.

It’s the perfect recipe for a weekend afternoon and you can make enough to have leftovers for a couple of days.

Use quality boneless skinless chicken breasts from your local grocer.

You can adjust the spiciness level by the salsa you chose.

This step is easy – just pick your favorite! Many supermarkets have homemade salsa that you can use and these are always excellent.

You can certainly use popular brands or even make you own. The variations are endless.

You can also throw in fresh green, yellow and red peppers, onions, garlic or others kinds of canned beans – the choice is your.

The recipe ingredient list will get you started with the basics, you can take it from there.


  • 2-4 boneless skinless chicken breasts
  • 1 can of drained kernel corn
  • 1 jar of your favorite salsa
  • 1 can of black beans - drained


Step 1

Place beans, corn and 1/2 the salsa in your slow cooker. Mix well.

Step 2

Add boneless skinless chicken breasts and cover with remaining salsa.

Step 3

Cover chicken with remaining salsa.

Step 4

Set slow cooker to low and cook for 6-8 hours.
