Easy Slow Cooker Thai Chicken Recipe

  • 1½ lb. boneless chicken thighs or breast
  • ¾ c. light coconut milk
  • 1 tbsp. red curry paste
  • 1 grated ginger
  • 2 tbsp. natural creamy reduced-fat peanut butter
  • 1 large onion
  • 2 red bell peppers
  • 1 lb. rice noodles
  • ¼ c. fresh cilantro leaves
  • 1 c. frozen peas
  • Lime wedges, for serving


Step 1

In a slow cooker, combine the peanut butter. coconut milk, ginger and curry paste; then add in the chicken, onions and peppers.

Step 2

Cook, covered, until chicken is cooked through, on low for 5 to 6 hours or on high for 3 to 4 hours.

Step 3

About 20 minutes before serving, cook the noodles according to directions. Mix the frozen peas into the chicken mix and cook. Cover for about 3 minutes. Spoon the chicken mix to the cooked noodles. Sprinkle with cilantro and serve with lime wedges.
