- 1½ lb. boneless chicken thighs or breast
- ¾ c. light coconut milk
- 1 tbsp. red curry paste
- 1 grated ginger
- 2 tbsp. natural creamy reduced-fat peanut butter
- 1 large onion
- 2 red bell peppers
- 1 lb. rice noodles
- ¼ c. fresh cilantro leaves
- 1 c. frozen peas
- Lime wedges, for serving
In a slow cooker, combine the peanut butter. coconut milk, ginger and curry paste; then add in the chicken, onions and peppers.
Cook, covered, until chicken is cooked through, on low for 5 to 6 hours or on high for 3 to 4 hours.
About 20 minutes before serving, cook the noodles according to directions. Mix the frozen peas into the chicken mix and cook. Cover for about 3 minutes. Spoon the chicken mix to the cooked noodles. Sprinkle with cilantro and serve with lime wedges.
