Learn how to make tomato soup the simple and delicious way. There are many variations but this one is a classic. For some, tomato soup is comfort food which livens up the mood and body. You can garnish with crunchy croutons to make it more appealing especially for the little ones in the family.
Prepare for second servings when you make this easy tomato soup recipe.
- 28 ounce (1 can) whole, peeled Tomatoes (include the juice)
- 1 1/2 cup Chicken Broth
- 1 tbsp Olive Oil
- 1 medium sized Yellow Onion (diced)
- 2 medium Garlic Cloves (minced)
- 1 tbsp Unsalted Butter
- Red Pepper Flakes (pinch only)
- 1/3 cup Heavy Cream
- Salt and Pepper to taste
- Basil Leaves
- Parmesan Cheese (grated)
Use a medium-sized sauce pan on medium-low heat. Melt the butter and olive oil. Add the onions and a big pinch of the salt.
Stir for 15 minutes until the onions are soft. Mix the garlic and a dash of red pepper flakes. Cook for another 5 minutes.
Turn the heat to medium then add the tomatoes and the juice to the pan. Crush the tomatoes to a pulp for about 10 minutes. Simmer for 10 minutes.
Add the chicken broth. Cook for another 15 minutes until the tomatoes are soft and falls apart.
Remove from the saucepan and let cool for 10 minutes. Next step is to make a puree using a blender or an immersion. Do not puree the whole batch but in smaller quantities so it will smoot better,
Next step is to mix the heavy cream under low heat. Add salt and pepper to taste.
Serve in bowls with desired garnish.
