This vegan tropical pink smoothie is perfect for those busy mornings when you don’t have a lot of time to think about breakfast, or at any time of the day for a quick filling drink to satisfy. It only takes about five minutes from start to finish and cleaning up is just as easy.

On those mornings when you don’t even have enough time to make scrambled eggs, this vegan tropical smoothie will save the day.

If you have lots of hungry mouths to feed…or teenage boys who never seem to stay full you can easily multiply the ingredients to taste just as yummy. If you do multiply the recipe I would recommend leaving the Chia to 1 teaspoon of each as it might get way too gritty.

This smoothie is thickened with flax seeds and sweetened with dragon fruit. It’s a sweet and nutritious smoothie that will make you look forward to breakfast.

What Is Dragon Fruit

Dragon fruit, also known as pitaya, is a tropical fruit from various cactus plant species. The flavor is a cross between a kiwi and a pear.

There are quite a few varieties of dragon fruit, but the one that gives our smoothie its vibrant color is the Red Dragon Fruit. You can also find dragon fruit in a white and yellow variety, but be sure to grab the red one for this particular recipe.

How To Cut Dragon Fruit

Although the fruit itself may look intimidating, it’s actually quite easy to cut into. Once it is ripe, all you have to do is cut the dragon fruit in half and then peel away. The riper it is, the easier it will be to peel.

How Do I Know When Dragon Fruit is Ripe?

It will be slightly soft (but not too soft) – it will just have a little give. If a dragon fruit is still hard to the touch, it is not yet ready. Also, the skin will be vibrant in color and smooth to the touch.

Where Can I Buy Dragon Fruit?

It is best to go to a specialty grocery store, or an Asian supermarket to get some fresh dragon fruit.

Use Ripe Banana

When the banana is ripe enough it will be easier to mash and puree. When it’s not ripe, it doesn’t puree as easily. Your banana should be so ripe that the skin is starting to darken and might even have spots.

Use Frozen Fruit

We love using frozen pineapple for this recipe because then it allows us to not use ice – which further dilutes the flavor. If you don’t have frozen pineapple, then try freezing one of the other fruits instead of using ice.

Use Chia Seeds

If you don’t have any flax seeds at home, feel free to replace them with chia seeds. It’ll still be just as delicious in your smoothie!

Can You Make Smoothies Ahead?

No, I don’t recommend making smoothies ahead of time. They will taste the best when they are freshly blended.

Oat Milk Replacement

If you don’t have oat milk, you can use plain, unsweetened almond milk instead. Coconut milk will also taste delicious with the ingredients too!

  • Blender

Ingredients

  • 1 ripe banana spotty is best
  • 1 1/2 cups frozen pineapple
  • 1/2 Red Dragon fruit this is what gives it that amazing colour
  • 1/4 cup Spring water
  • 1/4 cup oat milk
  • 2 tbsp flax seeds

Instructions

  • Add the ingredients to the blender. Be careful not to overfill it.
  • Blend the ingredients until you reach the consistency you like.
