Ingredients

  • 1 stick butter approx. ½ cup
  • 1 cup brown sugar packed
  • 2 tbsp all-purpose flour
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 1 large egg room temperature
  • 1 ½ cups rolled oats

Instructions

  • Preheat oven to 350 degrees F and line two cookie sheets with parchment paper and set aside.
  • Add butter and brown sugar in a medium-sized saucepan. Melt and mix both ingredients over medium heat.
  • Remove the saucepan from the heat and add flour, vanilla, and salt. Stir quickly, incorporating all ingredients - set aside to cool for about 15 minutes.
  • Working quickly, add eggs to batter and mix. You will want to make sure the batter is not scalding hot so that your egg doesn't cook once added. The egg should be blended/well-combined into the batter.
  • Add oats and fold carefully.
  • Use a tablespoon measuring spoon to drop dollops of the mixture onto lined baking sheets. 12 should fit on each sheet - be sure to keep them 1 ½ - 2 inches apart. Use the back of a spoon to spread out each mound slightly.
  • Bake in the oven for 8-10 minutes. Cool before serving.
