Maple Roasted Sweet Potatoes

When you're trying to think of a side dish that is full of flavor but also, very easy to put together, these Maple Roasted Sweet Potatoes should be your solution! They pair perfectly with just about everything!

Ingredients

  • 3 cups cubed sweet potatoes without the skin
  • 3 tbsp extra virgin olive oil
  • 3 tbsp pure maple syrup
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 400 degrees F. Line a baking sheet with parchment paper and set aside.
  • Add the cubed potatoes to a mixing bowl. Add EVOO and maple syrup and mix until potatoes are completely coated.
  • Pour the coated sweet potatoes on the lined baking sheet. Season with salt and pepper (to taste).
  • Bake in the oven for about 20 minutes. Serve with your main meal and enjoy!
