Homemade Sweet Potato Hummus

An all-time favorite dip, Sweet Potato Hummus also makes a great spread for sandwiches and wraps.

  • Non-Stick Skillet
  • Food Processor

Ingredients

  • 3 tbsp extra virgin olive oil divided
  • 4-5 slices of sweet potato peeled
  • 1 ½ cups canned chick peas
  • 2 whole garlic cloves peeled
  • 2 tbsp almond butter
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  • Add 1 tbsp of EVOO onto a non-stick skillet and heat over medium heat.
  • Fry the sweet potato slices, about 2-3 minutes on each side. Remove the slices from the pan and allow to sit on a plate lined with paper towel.
  • Add chick peas, sweet potatoes, garlic, almond butter, lemon juice and salt and pepper in a food processor.
  • Pulse until thoroughly combined.
  • Serve in a large bowl with veggies, chips, crackers and pita bread.
