- 1 large banana very ripe
- 2 eggs large
- ⅓ cup pumpkin puree
- 1 tsp vanilla extract
- 3 tbsp butter melted
- ¾ cup all-purpose flour
- 3 tbsp brown sugar
- ½ tsp baking soda
- ¼ tsp baking powder
- 1 tsp ground cinnamon
- Pinch of salt
- 1 cup chocolate chips
Generously coat a loaf pan with cooking spray and set aside.
Preheat oven to 350 degrees F.
In a large bowl, use a potato masher to mash banana. Add eggs, pumpkin puree, vanilla and butter and mix.
Once all wet ingredients are well-combined, add flour, brown sugar, baking soda, baking powder, cinnamon and salt. Mix well.
Once the batter has formed, fold in chocolate chips.
Pour batter into coated loaf pan and bake for 25 to 30 minutes or, until a toothpick comes out clean when inserted in the center.
Allow to cool slightly before serving. Enjoy!
