Ingredients

  • 1 large banana very ripe
  • 2 eggs large
  • cup pumpkin puree
  • 1 tsp vanilla extract
  • 3 tbsp butter melted
  • ¾ cup all-purpose flour
  • 3 tbsp brown sugar
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • 1 tsp ground cinnamon
  • Pinch of salt
  • 1 cup chocolate chips

Instructions

  • Generously coat a loaf pan with cooking spray and set aside.
  • Preheat oven to 350 degrees F.
  • In a large bowl, use a potato masher to mash banana. Add eggs, pumpkin puree, vanilla and butter and mix.
  • Once all wet ingredients are well-combined, add flour, brown sugar, baking soda, baking powder, cinnamon and salt. Mix well.
  • Once the batter has formed, fold in chocolate chips.
  • Pour batter into coated loaf pan and bake for 25 to 30 minutes or, until a toothpick comes out clean when inserted in the center.
  • Allow to cool slightly before serving. Enjoy!
