Ingredients
4cupsfrozen hash brown
6large eggs
Salt and pepper to taste
1large orange bell pepper
6-8breakfast sausages
1tbspcanola oil
1/2cupshredded cheddar cheese
Instructions
Begin by preheating the oven to 350 degrees F.
Add frozen hash brown to the bottom of the casserole dish.
In a bowl, whisk together eggs. Season with salt and pepper. Pour over the layer of frozen hash browns.
Dice the bell pepper. Cut the breakfast sausages to bite-size pieces.
Add canola oil to a skillet and heat over medium. Brown sausages and cook chopped bell pepper.
Add the browned meat and veggies as a layer into the breakfast casserole. Top off with shredded cheese.
Cover the casserole dish with aluminium foil and bake for 1 hour.
Once the time is up, remove foil and bake for another 10 minutes.
