Ingredients

  • 4 cups frozen hash brown
  • 6 large eggs
  • Salt and pepper to taste
  • 1 large orange bell pepper
  • 6-8 breakfast sausages
  • 1 tbsp canola oil
  • 1/2 cup shredded cheddar cheese

Instructions

  • Begin by preheating the oven to 350 degrees F.
  • Add frozen hash brown to the bottom of the casserole dish.
  • In a bowl, whisk together eggs. Season with salt and pepper. Pour over the layer of frozen hash browns.
  • Dice the bell pepper. Cut the breakfast sausages to bite-size pieces.
  • Add canola oil to a skillet and heat over medium. Brown sausages and cook chopped bell pepper.
  • Add the browned meat and veggies as a layer into the breakfast casserole. Top off with shredded cheese.
  • Cover the casserole dish with aluminium foil and bake for 1 hour.
  • Once the time is up, remove foil and bake for another 10 minutes.
  • Serve and enjoy!
