3cupscubed sweet potatoeswithout the skin
3tbspextra virgin olive oil
3tbsppure maple syrup
Salt and pepper to taste
Instructions
Preheat your oven to 400 degrees F. Line a baking sheet with parchment paper and set aside.
Add the cubed potatoes to a mixing bowl. Add EVOO and maple syrup and mix until potatoes are completely coated.
Pour the coated sweet potatoes on the lined baking sheet. Season with salt and pepper (to taste).
