An Easy Salad Alternative For Lunch
As the weather gets warmer, most people transition to fresh salads and refreshing iced teas as their lunch choices. There’s just something about a colorful plate of leafy greens, vegetables, and dressing that makes you feel like it’s finally summer.
To add a bit of change to your “salad routine,” last week I put together some bruschetta bites to serve as a light lunch. I was incredibly generous with the basil leaves in my recipe and scooped the finished mixture on top of slices of baked baguette. I munched on them while relaxing on my balcony, taking in all the sun and enjoying this brilliant change in weather.
If you want a creamy salad, try this chicken salad. It’s delicious on its own or with some baguette slices.

Tomato Basil Bruschetta Tips
All of the exact ingredients and steps are in the printable recipe card at the bottom of this post. First, here are some additional tips.
Slice The Baguette Thick
I made my slices about 1-inch thick. If they are thicker, they are easier to grab and will hold all of the ingredients better.

Use Fresh Herbs And Ingredients
I used fresh basil, tomatoes, garlic, and onion. Fresh ingredients have so much more flavor than dried herbs!

Eat Them Fresh
These bites taste so much better when you eat them fresh. I like to chop up the ingredients, pile them on the bread, and enjoy my fresh little lunch. It’s so good!

Bruschetta Toppings
I used tomato, garlic, onions, and basil. There are so many other choices you can make, so layer it with your favorite foods.
