An Easy Salad Alternative For Lunch

As the weather gets warmer, most people transition to fresh salads and refreshing iced teas as their lunch choices. There’s just something about a colorful plate of leafy greens, vegetables, and dressing that makes you feel like it’s finally summer.

To add a bit of change to your “salad routine,” last week I put together some bruschetta bites to serve as a light lunch. I was incredibly generous with the basil leaves in my recipe and scooped the finished mixture on top of slices of baked baguette. I munched on them while relaxing on my balcony, taking in all the sun and enjoying this brilliant change in weather.

Slice The Baguette Thick

I made my slices about 1-inch thick. If they are thicker, they are easier to grab and will hold all of the ingredients better.

Use Fresh Herbs And Ingredients

I used fresh basil, tomatoes, garlic, and onion. Fresh ingredients have so much more flavor than dried herbs!

These bites taste so much better when you eat them fresh. I like to chop up the ingredients, pile them on the bread, and enjoy my fresh little lunch. It’s so good!

Ingredients

  • 1 Baguette sliced into 1-inch thick pieces
  • 1/4 cup Olive Oil
  • 4 Tomatoes diced
  • 1/4 cup Basil leaves chopped
  • 2 Garlic Cloves minced
  • 1/4 cup White Onion chopped
  • 2 tbsp White Balsamic Vinegar

Instructions

  • Slice the bagquette into 1-inch thick slices.
  • Chop up the tomatoes, onion, garlic, and basil.
  • Add all the ingredients in a large mixing bowl.
  • Top the baguette pieces with the tomato basil mixture.
