Most of my friends are SO anti-canned veggies. Being a seasoned food content creator, I know that you can do so many wonderful things with canned vegetables. This recipe is definitely one of them!

How To Make Green Bean Salad

This Easy Green Bean Salad recipe will prove that canned veggies definitely have a place in the kitchen – and have the potential to create a delicious meal.

Different Types of Feta

Did you know that there are different types of feta cheese? Yes! Between Greek feta to Bulgarian feta, I urge you to check out a specialty cheese store to discover the different kinds.

For this recipe, feel free to use traditional Greek feta (fun fact: did you know that traditional feta cheese is actually made with goat’s milk?). However, I used a basil-infused one, which definitely helps with the flavor.

Don’t Worry About Over-Draining

When you drain the canned beans, don’t worry about making sure that it’s dry/all the liquid’s out. Some of that liquid is okay to have in the salad mix, as it helps with the flavor and the dressing.

Are There Any Ingredient Alternatives?

What I love most about this recipe is that it uses ingredients that are most likely already in your pantry/fridge. However, if you want to take the very easy route, you can opt to use Italian dressing rather than our homemade olive oil dressing.

Be Sure To Use Pitted Olives

Make your life easier and use already-pitted olives. You’ll have to dice the olives for this recipe, so pitted is definitely the way to go.

Why Does This Taste So Familiar?

You may take your first bite out of this Green Bean Salad and think, “Hmm… have I had this before?” Well, you wouldn’t be completely wrong! This Green Bean Salad is very similar to a Greek salad – except the green beans replace the cucumber and red onion!

The Perfect Side Dish

While this salad tastes great as a stand-alone meal, I love serving it as a side: especially with steak dinners and roasted chicken plates.

Green Bean Salad

Ingredients

  • 2 14 oz. cans cut green beans
  • 1/2 cup pitted Kalamata olives
  • 1/2 cup cherry tomatoes
  • 1/2 cup Feta cheese
  • 1/2 cup extra virgin olive oil
  • 1 lemon
  • Salt and pepper to taste

Instructions

  • Drain the canned beans and pour into a large mixing bowl.
  • Cut the olives into quarters and add to the bowl.
  • Cut the cherry tomatoes in halves and add.
  • Crumble the feta cheese and sprinkle over the rest of the ingredients.
  • Evenly pour the olive oil into the mix, and squeeze the juice of one lemon.
  • Season with salt and pepper.
  • Mix and enjoy!
