When it comes to recipe-making, I am NOT a fan of lunch. It really just cuts into the middle of my busy workday, so I often eat whatever leftovers I can find in my fridge. The worst is ordering take out, but I like to indulge in a good meal.
That’s when I knew it all had to stop: and I had to take matters into my own hands and start prepping an easy yet, delicious lunch. This is where my Past Salad with Italian Dressing comes into play!

- Fusilli pasta
- Red bell pepper
- Pitted kalamata olives
- Cucumber
- Cold cuts of your choice
- Feta cheese
- Italian dressing

I recommend eating this one is soon as possible as it does not freeze very well. Otherwise, it’s great for meal prep and can be stored in the refrigerator in an airtight container for up to 5 days.

Pasta Salad With Italian Dressing
SERVINGS
Ingredients
- 5 cups cooked fusilli pasta
- 1/3 cup diced cucumber
- 1/3 cup chopped pitted kalamata olives
- 1/2 cup diced red bell pepper
- 1/3 cup crumbled feta cheese
- 5-7 slices cold cuts of your choice cut into small pieces
- 1/2 cup Italian dressing
Instructions
- Add cooked and slightly cooled down pasta into a large mixing bowl.
- Add cucumber, olives, red bell pepper, feta cheese and cold cuts. Mix.
- Add Italian dressing and mix to coat all of the ingredients.
- Refrigerate for at least 3 hours. Serve and enjoy!
