My husband has long been a key lime pie enthusiast. Recently, while organizing my pantry, I came across a neglected box of vanilla cake mix. Inspired by this discovery and my husband’s love for key lime, I decided to embark on a culinary experiment. Why settle for plain vanilla cupcakes, when a simple addition can transform them into delightful Key Lime Cupcakes with a refreshing summer twist? It’s amazing how a small change can lead to such a flavorful upgrade!

How To Make Key Lime Cupcakes

When life gives you boxed cake mix, make key lime cupcakes! Easy to bake, refreshing to taste, and a dollop of homemade buttercream on top – perfection in every bite!

Prepare the Cupcakes Like Usual

My favorite part about these cupcakes is that you can use a boxed cake mix and it turns out oh-so delicious!

Follow the instructions on the box, and make a total of 12. Check out the next step on how to elevate them and turn them into lime-flavored delights!

Mix the Batter First

The best way to incorporate the lime into the batter is by first mixing the batter all together. Once the cupcake batter has formed, add your lime juice. This way, you know that everything gets well incorporated.

How Many Cupcakes in One Box?

Generally, one box of cupcakes yields in two dozen (24) cupcakes. I like to make the batter in its entirety, then store the remaining batter in an airtight container and bake another batch the following day.

How Much Lime Juice in One Lime?

There are about two tablespoons of juice in one lime. When we say to use the juice of one lime, you can also use two tablespoons.

The Truth Behind Key Lime Desserts

Of course, as much as you can, you’ll want to use key limes for your key lime-themed desserts. However, that’s not always a possibility, so using regular limes is a fine alternative. Sine key limes aren’t normally accessible to most, feel free to purchase key lime juice to use in your recipes.

Easy Key Lime Cupcakes

Ingredients

  • Boxed cake mix and all ingredients required to make it
  • 2 limes
  • 1/2 cup butter softened
  • 2 cups confectioners’ sugar
  • 1 tbsp milk

Instructions

  • Begin by making the cake batter according to the box’s directions (including preheating the oven to the suggested temperature).
  • Zest one lime and leave the zest peelings on a plate – set aside.
  • Once batter has formed, add juice of one lime (we recommend using the juice from the lime you just grated). Mix thoroughly.
  • Line a muffin tin with paper liners and fill each 2/3 of the way with cupcake batter. Any leftover batter can be poured into an airtight container, refrigerated and used the next day.
  • Bake according to box’s directions and allow to cool completely, about one hour.
  • In a large mixing bowl, add softened butter, confectioners’ sugar and milk.
  • Beat on low then slowly increase to high until a buttercream forms. Fold in lime juice from half a lime.
  • Pipe each cupcake with lime buttercream and sprinkle with lime zest. You may also add a slice of lime on top.
