Use Fresh Herbs

Even though dried dill will still taste delicious, I highly suggest using fresh herbs. They will have abundantly more flavor. Plus it looks fancier with fresh herbs too.

Ricotta Cheese Replacement

If you don’t have ricotta cheese, you can easily use cream cheese in its place. You basically just want a smooth spreadable type of cheese that will taste delicious with the dill and tomatoes.

Add Your Favorite Veggies

This is completely optional, and I chose not to do it. You can certainly chop up some broccoli florets into tiny pieces and sprinkle them on top. Other veggies that might taste delicious on the puff pastry are squash, zucchini, or even some carrots or onions.

Use Store-Bought Puff Pastry

When it comes to working with puff pastry, I highly recommend going for store-bought. Puff pastry can be very challenging to make and the packaged ones are really great-tasting and will save you tons of time!

Don’t forget to defrost your puff pastry! You’ll likely be picking it up from the grocer’s freezers, so most will need to defrost in the fridge overnight.

This tomato tart is definitely one for your family’s cookbook: easy to prepare and even easier to chow down on. Everyone will love its flavour profiles and how versatile it is.

Ingredients

  • 1 packet puff pastry thawed if frozen
  • 2 tomatoes large, sliced
  • 1.5 cups ricotta cheese
  • 1 egg large
  • fresh dill
  • 2-3 tbsp extra virgin olive oil
  • Salt and Pepper to taste

Instructions

  • Line a baking sheet with parchment paper and preheat oven to 400 degrees.
  • Carefully place rolled-out puff pastry on line baking sheet and set aside.
  • Place your tomato slices on paper towel and cover with more paper towel. This will soak up most of the water from the tomatoes.
  • In a medium-sized bowl, whisk together ricotta cheese and egg.
  • Use an offset spatula to spread the ricotta mixture onto your puff pastry, leaving the edges untouched, about ½ an inch.
  • Place tomatoes on top of the spread ricotta mixture.
  • Sprinkle with dill, olive oil and salt and pepper.
  • Bake for 18 to 20 minutes. Cut into square pieces – serve and enjoy!
