Easy Slow Cooker Southwest Chicken is one of my family’s favorites, and so it’s a frequent go-to meal on our rotation. I literally toss everything into the crockpot and let it simmer half a day, toss it over rice, and we have an amazing and filling dinner ready to go!

You can make this Easy Slow Cooker Southwest Chicken Recipe with whatever you have on hand in your pantry, I created it using items that are basic staples most of us have in our pantry inventory anyway to keep it simple but it still really packs a punch with flavor and is extremely filling.

How To Make Easy Slow Cooker Southwest Chicken Recipe

Get ready to enjoy a new family favorite; even my picky eaters call this one a winner. The hardest part of this recipe is opening the cans… well, maybe it’s the waiting for it to be ready while your house fills up with the wonderful smell! Make it exactly as I have it or adjust the ingredients a bit to fit what you have on hand or just prefer.

What You Need:

Kitchen Tools Needed:

  • Slow Cooker
  • Can opener
  • Wooden spoon
  • Two Forks

Ingredients Needed:

  • Frozen chicken breast
  • Canned black beans
  • Canned Rotel with Green Chiles, mild
  • Canned corn
  • Taco seasoning
  • Chicken Broth
  • Cream Cheese
  • Salt and Pepper
  • Rice

Can I substitute it with different ingredients?

Yes! The beauty of this recipe is that you can use what you have on hand to fill it out, the most important ingredients are the chicken and some kind of southwest seasoning- taco or fajita, storebought, or your favorite homemade mix. Beyond that, you can add any type of canned beans or vegetables you prefer to make it easy and suited to your liking. You could also use canned chicken or even shredded rotisserie chicken, added at the end.

What do I serve it with?

We enjoy it over white rice but you can serve yours over yellow or any flavorful rice you like. It also goes wonderfully on a tortilla or served with hearty corn chips.

Can I freeze this?

Yes, it freezes very well, just allow it to cool after cooking and then transfer it to a freezer-safe container or storage bag and keep it frozen for up to 6 months.

Easy Slow Cooker Southwest Chicken Recipe

Ingredients

  • 1 pound boneless chicken breast
  • 1 can corn, drained
  • 1 can black beans
  • 1 can rotel, mild
  • 2 packets taco seasoning
  • 1/2 cup chicken broth
  • 1 block cream cheese

Instructions

  • Spray slow cooker with nonstick spray.
  • Place frozen chicken breasts in the bottom.
  • Cover with beans, corn, tomatoes, seasoning packets, and broth.
  • Cook on low for 4-6 hours.
  • Add cream cheese in the last 20-30 minutes of cooking, stir it in well.
  • Use two forks to shred the chicken up a bit to bite size pieces.
  • Serve over rice and enjoy
