You can easily turn this into a freezer meal that you heat up later when you don’t have time to cook. Just wrap each chicken breast individually in parchment paper and place them in a freezer-safe food storage bag. They will stay fresh in the freezer for up to three months.
Mushroom and Onion Baked Chicken
- 2 chicken breasts
- Salt and pepper to taste
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ cup sliced mushrooms
- ¼ cup chopped onions
- ¼ cup softened butter
- Preheat oven to 400 degrees F. Line a baking dish with parchment paper.
- Add chicken breast to the lined baking dish. Season with salt and pepper, followed by onion powder and garlic powder.
- Top off the seasoned chicken with musrhooms and onions.
- Add dollops of softened butter throughout the chicken and veggie mixture.
- Bake for 25-30 minutes or until completely cooked through. Serve with your favorite side dish.
