What Is Tetrazzini?
There are a bunch of different ways to make tetrazzini. Most recipes are made with diced chicken or seafood that’s combined with thin pasta and tossed in a rich cream sauce.
This recipe is one you can make for the entire family and customize to match your family’s tastes. Diced chicken thighs, alfredo sauce, sherry, and delicate vermicelli noodles are baked to perfection. The result is a hearty and comforting dinner everyone loves.

Ingredients

- Chopped cooked chicken
- Parmesan cheese
- Cream of mushroom soup undiluted, 10 3/4-ounce
- Vermicelli, cooked
- Refrigerated Alfredo sauce, 10-ounce
- Freshly ground pepper
- Sliced mushrooms, drained
- Dry sherry
- Slivered almonds toasted
- Chicken broth

Dice The Chicken Into Small Pieces
The first step is to mix the chicken, sauce, creamed soup, and other ingredients in a bowl together. Before you do that, make sure the chicken is cut up into bite-sized pieces. Use a chopper or kitchen shears to make this go faster and easier.
This is a fantastic way to use leftover cooked chicken from earlier in the week. Or speed up the prep time and chop up

Make Fresh Chicken
The easiest way to make this recipe is to use rotisserie chicken. However, you can also bake your own – we recommend using boneless, skinless chicken thighs and covering them in olive oil and baking in 400 degrees for about 30 minutes.
This will make them juicy and tender, and you can shred/cut it into small pieces for the tetrazzini.

Grease the Baking Dish
This recipe is very cheasy and uses lots of dairy, so make sure that you grease the dish. Otherwise, it might stick and give you a hard time when you clean it.

Best Pasta for Tetrazzini
In the recipe, we indicate vermicelli noodles, which is a very thin pasta. Alternatively, you can also use angel food hair or other thin noodles. In fact, for our photos, we decided to go with rice vermicelli, which is most commonly used in Asian cuisine but worked splendidly with this recipe!

Make It Extra Cheesy
Feel free to add more cheese than indicated, including your favorite hard cheeses (just make sure that it’s shredded), like extra cheddar.

Storing It
The great thing about this recipe is that it makes a lot – so it’s great for leftovers. Once the dish has cooled down, scoop it into an airtight food container and refrigerate for up to 3 days.

What To Eat With Tetrazzini
Serve this creamy chicken noodle casserole with your favorite sides. It’ll taste delicious with some mashed sweet potatoes, green bean salad, and oven roasted asparagus. Then, add some dinner rolls to the table and dinner is ready!

Ingredients
- 3 cups chopped cooked chicken
- 1 can cream of mushroom soup undiluted, 10 3/4-ounce
- 1 1/2 cups parmesan cheese
- 7 ounces vermicelli cooked
- 1 container refrigerated Alfredo sauce 10-ounce
- 1/4 teaspoon freshly ground pepper
- 1 can sliced mushrooms drained, 3 1/2-ounce
- 1/4 cup dry sherry
- 1/2 cup slivered almonds toasted
- 1/2 cup chicken broth
Instructions
- Combine the chicken, 1 cup Parmesan cheese, mushroom soup, Alfredo sauce, mushrooms, almonds, chicken broth, sherry and pepper. Mix in the pasta.
- Use a lightly greased 11 x 7 baking dish, Transfer the mixture. Sprinkle the 1/2 cup remaining Parmesan cheese.
- Bake for 25 minutes at 350 degrees.
